Healthy Cooking

Feeling a little blue today. Let's just say that it is pouring down rain and the weather reflects how I feel. Today would be the perfect day to be at home, on the couch covered in blankets with movies and a good book. But I do enjoy being able to pay my rent, so I guess I have to work. And I saw I had a couple of comments from people I didn't know and that helped to cheer me up a bit.



But I digress.



After I got engaged, I really started trying to lose some weight to prepare for the wedding. Plus, I needed to lose some weight anyway. I feel like I looked swollen (but it was just chubbiness). So after LOTS of running and little change, my doctor gave me this advice:




"It's all about diet, not exercise. It takes an hour to burn off what you eat in minutes."





Man... those words are true. I think a lot of people overestimate the number of calories they burn working out. Not to mention, I think eating bad food does more than just add calories. I think it messes with the whole balance of your system.



When I lived in England, Karla used to have me over for dinner. I may have mentioned this, but Karla is a health nut and just happens to be an AWESOME chef. Seriously. She just whips up super nutritous and healthy stuff without much effort. Watching her cook has shown me how easy it is to make some healthy swaps when cooking.



Between Karla and some healthy cooking blogs, mainly THIS one, I have made some pretty good and healthy dishes. Of course, cooking things from scratch takes longer than making pre-made processed foods. And it is hard to keep things balanced between work, the house, the husbands Ph. D stuff, and exercising. So I decided that this week I was going to make pretty much all of our meals for the week on Sunday. So that is what I did.



I made a turkey breast, zucchini casserole, and steamed vegetables for dinner last night. And then I made a healthy Shepard's Pie and Skinny Tuna Noodle Casserole for dinners this week. I also made a fruit salad with strawberries, kiwi, and blueberries.



That may not seem like a ton of food, but with just 2 of us eating at home, I think this will be enough for lunches and leftovers this week! So other than cutting up some more veggies to steam, I am pretty much done cooking and all of our meals were made from scratch with little to no processed food.



I haven't been able to really exercise much lately, I have been able to eat as much as I want and my weight has managed to go down a little. :)



I think I am going to start sharing some of my cooking stuff on here a little more. Now, I am fully aware that not that many people read this (other than my husband). But who knows. For clarification, I am not really good at creating recipes myself. Mostly, I follow recipes and make some changes to them. For the most part, things I put on here will be someone else's creation and I will give them the credit.



P.S. - The zucchini casserole is SO GOOD!! Phil and I couldnt' figure out why it was so amazing, but it really was. It is going to become a staple for my house I think.

I love Friday nights!!

Friday nights are my absolute favorite night of the week. Saturday nights are ok but Friday nights are the best. I have always loved Friday nights. I think part of it has to do with the fact that I grew up in a blended family. My mom had a son from a previous marriage. My dad had a son and a daughter from a previous marriage. Every other weekend, they would all go spend the weekend with their other parents. They were also all much older than me and (other than my mom's son) were more than a handful during their teenage years.

WHICH MEANS...

I usually got treated pretty well on Friday nights when my siblings were gone. We almost ALWAYS went out to dinner. Sometimes a movie. I would come home and have the TV in the family room ALL TO MYSELF so that I could watch TGIF (oh the glories of TGIF). I remember crying once when we got home late and I missed Full House (don't worry I was like 7).

Anywho...

Friday nights are awesome.

We don't have anything special planned for this friday night. We are getting some Chinese food and watching Netflix movies while cleaning. But still, I am so stinkin' excited. Why? Because it is FRIDAY!!

V-day Gift

Last night when we got home, my Valentine's Day gift was in the mail!! I was so excited to see what my Mr. had gotten for me.




He did well...








This is the necklace he got me from The Vintage Pearl. Oh my I totally love it. They have tons of necklaces I want (but I don't have children so a lot of them don't make sense).

I so so LOVE this necklace that I almost can't contain myself. Go check out the website. After all, Mother's Day is coming up soon.

Stuffed Mushrooms



The stuffed mushrooms were a success! Also, after a little research we concluded that they really aren't that bad for you probably. They have sausage and cheese in them. Other than that, they have probably 3 or 4 servings of veggies. AND portabella mushrooms are apparently super good for you. Who knew?



The recipe made MORE than enough stuffing for the 2 portabellas we had last night, so I followed the recipes advice and had some baby bellas to stuff too. So we stuffed and baked those too and I just had them for lunch. YUMMY!



It must be the beginning of allergy season or something because my sinuses, throat, and chest have been mad at me. Hopefully this isn't a problem for any of you. :)



Such a busy night ahead of us, getting ready to head East for Karla and Ben's wedding. I am excited to see Karla (even though she will be busy) and to celebrate her wedding day with her. Not to mention it will be a nice little getaway with my Mr.



I am trying to be better about updating my blog. But I realize I don't have much to write about today. I haven't been sleeping well because of my sinus issues and my throat hurts so I am not exactly talkative. Actually I am the opposite of talkative. Just keep thinking of the stuff I need to do when I get home. And I have no idea what we are having for dinner tonight.

Happy <3 Day!

In the past, I haven't been a huge fan of Valentine's Day. I kind of think the only people who like it are the ones that always had flowers sent to them in high school. I was not one of those people. Not to mention that my birthday is really close to Valentine's Day and boyfriends have always tried to group the two together. But since meeting Phil, I have had some better V-days. Phil has done a great job of making my day special. I still don't like to have high expectations for the day but since I am now a love-sick person, I don't mind having an excuse to be romantic with my Mr.

So far, I found this note in my lunch box...






And my officemate got me these flowers...






And we are celebrating this puppy's 4th birthday (she is now older than Phil and I in dog years)...






Phil and I are making these for dinner. :) I think they will be yummy.
